Join us for a culinary journey that celebrates the flavors of Italy in a modern, vegan twist.
For this new plant-based menu, Chef Paul has created two vegan variations of his signature speedy gnocchi. He has experimented, tested, and tweaked these recipes, and has come up with out- of- the- box ideas for preparing a delicious Italian menu that is dairy and meat-free.
You’ll start this class by making a seasonal asparagus salad, dressed with a bright and versatile lemon-tahini dressing. The main course is a vegan gnocchi, cooked two ways: pan roasted and boiled. To accompany them, you’ll prepare two delicious sauces, a superb vegan kale and walnut pesto, and a zingy marinara. For dessert, Chef Paul has created a super tasty strawberry basil sorbet recipe that brings a refreshing close to the meal.
Classes are not refundable, but you can reschedule if we are notified at least 7 business days prior to the class you have signed up for. If you find you can not make it to a class at the last minute, please consider finding someone to take your place.

Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!

There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.
