What you'll learn in this pastry class:

In this cooking class with Chef Katie, you will learn how to prepare an array of French pastries completely from scratch using high-quality ingredients and smart French pastry techniques.

Chef Katie will begin the class by teaching you how to prepare the pâte à choux dough, which you will then shape and transform into profiteroles, eclairs, and gougeres. Then, you will learn how to create an array of fillings and glazes, including a classic pastry cream, a luxurious and velvety mousseline sauce, a cheesy mornay sauce, and chocolate ganache.

Our cooking classes are designed to be social events that do not require any previous experience. Guests are welcome to purchase beer to enjoy during the class.

She is a great chef who is patient in teaching various baking techniques. However, some recipes done in class were not listed on the recipe page, but rather explained verbally afterwards, when asked upon request. The chef said it was completely alright to take pictures, but when I did during her demonstrations on more difficult or skilled techniques, she would block or cover her hands, suddenly move away, or stopped demonstrating the technique altogether, and refused to show the technique again. What the chef says does not match her actions in class. Outside of that odd experience, the chef seems to have a pleasant personality and teaches well if you do not take any pictures. So I give the class an overall 4 stars.

AWESOME class! Chef Katie was lovely, very organized and efficient and we learned (and ate) a lot! I highly recommend and I plan on taking more classes with Plum & Honey.

Katie was very attentive to all that attended the class. The room and setup was very professional and comfortable. My friends and I enjoyed every minute. As for my pals this was a Christmas gift so it was important that they had a great time and they did!!!

Katie teaches a really fun, informative class. She keeps the mood light and offers tons of helpful information that is useful for all sorts of baking.
