About Atelier Sucré

Born in France, Simon Herfray began his pastry education in the local Vendee region, before earning a master’s degree in pastry and bakery at the local vocational pastry school. He’s worked at renowned bakeries and restaurants like Aubaine and Blue Bird in London, traveled to Australia to bolster his technique, and entered the NY pastry scene as the Executive Pastry Chef at Falai LLC in 2009 before lending his talents Cafe M. Today, he whips up spectacular desserts for the sister restaurants Bacchus and La Defense Bistro in Brooklyn, and plans to open French’Encas, a company designed to teaching others the art of French cooking through classes and workshops.

Located in the heart of East Harlem, Atelier Sucré's commercial kitchen offers a space to create delightful, delectable sweets. We welcome students of all experience-levels and provide all the equipment and tools needed. A kitchen is a special place for chefs; it's where the magic happens.

    We had such a wonderful experience taking the mille-feuille & madeleines class with Emily. She was an excellent teacher—knowledgeable, patient, encouraging, and incredibly generous with her tips and techniques. Emily made the class both informative and enjoyable, and she explained each step clearly while making everyone feel comfortable and confident. I learned so much about the techniques behind making a beautiful mille-feuille, and I left feeling inspired to try it at home.

    The class was great! Erin was thorough and open to questions, which I truly appreciate. I suggest having larger cake boards and a bit more time to practice the different styles, but overall, the instructor was so, so helpful. The cake also tasted great! I brought it home for my bday and everyone enjoyed it!

    Emily was a good instructor. I would just say this was a fairly large class and there were still 5 open spots. When I've taken other classes with smaller groups, it has been easier to get to know everyone. This felt like you need to be there with at least one friend to not feel left out. That said, Emily was able to acknowledge that not everyone was there with a partner and to adjust instructions accordingly.

    This is a great introductory course for people who would like to learn how to make pizza on their own. Chef Genevieve was fantastic because she explained everything well and came around and helped each group with the different steps. Everyone used the same recipe so it was interesting to see how differently the final pizzas came out of the oven just based on the slightly different techniques used. This has inspired us to experiment with our own pizza recipes at home to try and perfect our technique.

    The class was okay. I liked the instructor and what we made, but there was just way too much standing around and way too much of the instructor preparing everything for us.
