What you'll learn in this knife skills class:

You'll become familiar with julienne techniques, chopping and slicing vegetables, mincing herbs and supreming citrus with a clean and safe technique. Get firsthand experience by using what you've learned to prepare a delicious meal!

Learn to cook the following:
  • Young carrot soup with ginger
  • Free range roasted Cornish hens
  • Roasted medly of peppers, onions, and potatoes
  • Wilted kale, apples, and walnut salad
  • Orange mango sorbet with citrus wedges
Students below 18 years old should be accompanied by a parent/guardian.

There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.

Paul was a great teacher, very kind and patient and excited to help people learn about food, knife skills, and cooking a tasty, healthy meal. The class was a great experience, and the food was delicious.

The class was set up perfectly. There were two facilitators, one who led the life skill exercises, the other who went around to offer extra guidance/help and prepared our meal. After practicing and using the cut vegetables for a meal, we sat down at a nice long table at the back to enjoy the meal we prepped. I wished I learned how to cut chicken given the menu. It was a great date night and meeting two people. We left with a little recipe book of the food we made. The space was great, instructors were very knowledgeable, and we never felt rushed.

Miette

Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!
