Vicki Caparulo

Teaches at The Institute of Culinary Education

Vicki J. Caparulo, CCP, holds master certifications in Culinary Arts and Pastry and has been a passionate Cook and Culinary Instructor for many years. She is a Certified Culinary Professional (CCP) through the International Association of Culinary Professionals (IACP), one of fewer than 250 professionals worldwide who have earned this prestigious international designation. Currently in her 15th year as a Chef Instructor at the Institute of Culinary Education, Vicki is also a Recipe Developer, Cookbook Author, Freelance Food Writer, Nutrition Consultant, and Motivational Speaker, and has served as a Consultant and Recipe Developer to many prestigious organizations including LeRoy Adventures, owner of Tavern on the Green and the New Russian Tea Room in New York. A long-time member of the International Association of Culinary Professionals and actively involved in its Writers’ Section, Vicki served two terms as Chair of the IACP’s CCP Certification Program and Chair of the Cooking Schools and Teachers Section of the 4,500-member international organization. She is a two-term past President of the board of the New York Association of Culinary Professionals (NYACP), has served as a member of the President’s Council of the James Beard Foundation, and Treasurer of the IACP Foundation, the philanthropic arm of the IACP.
