Class Description

Description

Explore the rich and diverse culinary traditions of the Pacific Northwest in this engaging cooking class. The region, known for wild salmon, oysters, and craft beers, offers far more gastronomic treasures than first apparent. Its forests yield mushrooms and berries featured in countless regional recipes, while cedar planks serve as aromatic grilling surfaces that impart the distinctive smoky flavor characteristic of Northwest cooking.

During this hands-on class, you will learn techniques using authentic Pacific Northwest ingredients and methods to prepare several signature dishes:

  • Pacific oysters served with traditional mignonette sauce
  • Pan-seared salmon with crispy skin, complemented by blackberry sauce
  • Sautéed mushrooms and fresh herbs
  • Salt-and-vinegar potatoes with their tangy, savory profile
  • Kale, hazelnut, and goat cheese salad featuring local flavor combinations

Upon completion of the cooking class, you will enjoy the dishes you have prepared, paired with a selection of wines from the Pacific Northwest region that complement the flavors of each course.
