What you'll learn in this meat class:

You really can't beat good beef jerky. Believe it or not, this road trip staple is incredibly easy to make! What's more, most of the techniques involved can be applied to a wide variety of meats like venison, elk and other game.

In Jerkin' Around, the instructor will take you through all the steps involved with making your own jerky. We'll talk about the best cuts, marinading methods as well as the drying and dehydrating process. Just like in the Sausage Making Class, we'll begin with a demonstration showing the process from start to finish.

Each participant will then get to try their hand at slicing meat for jerky. Everyone then gets their own grip of sliced meat (about 2 lbs.) and is set loose on our marinade bar where you'll be able to make your own proprietary custom jerky marinade. Over the next few days, the Dickson's team will dehydrate everything for you and you'll come back to the shop to pick up your custom jerky to show off to your friends.

Please wear a sweater; classes take place in our cutting which is at about 60 degrees.

Description says they dehydrate the meat for you. Is that something that you could also do at home? Do you need special equipment for the dehydration part?

Yes, you can dehydrate it in your oven at home or potentially in an air fryer as well. They'll give you better details of the class. One of our classmates did just that, brought it home the same day.

This class was awesome. I bought it for my husband as a Christmas gift, and we both had a great time. The class was held in the new basement location of Chelsea Market, which we found with some help from the friendly staff of their upstairs shop. Our instructors were excellent hosts, funny, personable, and knowledgeable, answering any and all questions we had and guiding us to make the right cuts. There was even some charcuterie and beverages that we could help ourselves to as we made our own jerky. Definitely recommended.

The class was great. The instructors were very informative and supportive. Slicing the meat for the jerky was my favorite part, and in a few days you have over 2 lbs. of beef jerky! I highly recommend this course.

Am slightly cautious when I read tons of only positive reviews - but this class lives up to it! Easy going, generous and informative - Chris and the folks at Dickerson's really want you to share in their belief and enthusiasm in their products, and methods. Great, fun, and useful class. Learned a lot, was hands-on, and can't wait to pick up the product of our efforts!
