Description

Dickson’s Farmstand is a purveyor of a unique selection of artisanal meat and meat products. Our beef, lamb, pork, goat and poultry are sourced from local farms , hand-picked because of their commitment to producing natural, humanely-raised, high-quality and distinctive meat products.

At Dickson’s, we connect you to the source of your food: small-scale, sustainable farms that feel just out of reach here in New York City. We introduce you to each of our farmers by sharing with you the stories of their animals, their farms, and their growing methods.

Dickson's Farmstand Meats is dedicated to sustainable and educated meat buying. To further this goal, we will be offering a series of classes focused on helping our customers learn more about the whole animal, from field to plate. This New Year, you'll have the chance to learn where a skirt steak comes from by seeing it actually come off the steer, how to use more of the animal through terrine-making, the anatomy of a chicken, and much more. This is a great opportunity for anyone passionate about responsible meat consumption or the super carnivore!

Very informative teachers. Wish the class sizes were a little smaller, ended up having to share our station with another couple but it was fine. Made a lot of sausage and cooked it at home. They were delicious!

This class was awesome. I bought it for my husband as a Christmas gift, and we both had a great time. The class was held in the new basement location of Chelsea Market, which we found with some help from the friendly staff of their upstairs shop. Our instructors were excellent hosts, funny, personable, and knowledgeable, answering any and all questions we had and guiding us to make the right cuts. There was even some charcuterie and beverages that we could help ourselves to as we made our own jerky. Definitely recommended.

The class was great. The instructors were very informative and supportive. Slicing the meat for the jerky was my favorite part, and in a few days you have over 2 lbs. of beef jerky! I highly recommend this course.

Am slightly cautious when I read tons of only positive reviews - but this class lives up to it! Easy going, generous and informative - Chris and the folks at Dickerson's really want you to share in their belief and enthusiasm in their products, and methods. Great, fun, and useful class. Learned a lot, was hands-on, and can't wait to pick up the product of our efforts!

Great class. 2 suggestions: 1. At the show, the cow was in 3 pieces so it was sometimes hard to visualize where each part came from. Have a picture/chart of the cow, so that we can visualize where on the cow each cut is located. 2. It wasn't always which cut corresponded to typical cuts in a normal grocery store. They always referred to each cut by the specific names they assigned in their store, which were different from a typical store. For example, I wasn't clear where a typical chuck steak came from.
