What you'll learn in this dessert class:

Observing a specific diet, avoiding dairy or being allergic to gluten doesn't mean you have to deprive yourself of delicious dessert. Or perhaps you find yourself planning a dinner party where at least one guest has a dietary restriction that throws your dessert plan out the window. In this class, you will add to your repertoire of gluten free, dairy free and vegan dessert options. 

We will expose you to recipe formulas for classically gluten free and vegan desserts, that you can adapt to a variety of seasonal produce and flavor profiles. You will learn techniques for binding without eggs, gelling without gelatin, whipping cream from cashews, and replacing dairy with plant-based substitutes.

Menu will include:

  • Flourless Chocolate Cake* with Berry Coulis (contains eggs)
  • Bright Citrus Tarts with Toasted Pecan Crust
  • Apple Cider Poached Figs with Cashew Cream

All menu items above are dairy free and gluten free. 

This is a virtual hands-on class. We will provide a list of ingredients and materials at least 2 weeks in advance of the class.


Remote Learning

This course is available for "remote" learning and will be available to anyone with access to an internet device with a microphone (this includes most models of computers, tablets). Classes will take place with a "Live" instructor at the date/times listed below.

Upon registration, the instructor will send along additional information about how to log-on and participate in the class.

For single-session public events or classes or single days within multi-day classes:

  • If student cancels 7 or more days before the class/event start time, student is eligible for a cash refund (less a 7% processing fee) or a credit voucher (100% of purchase price) towards another Teaching Table class/event.

  • If student cancels 2 or more days before the class/event, student is eligible to apply the payment towards another Teaching Table class or event, including private classes and events.

  • No shows cannot be refunded. Cancelling after the cut off, withdrawing, or failing to attend results in forfeiting the full amount of the class or event fee. Student may send someone else to participate and/or receive materials. Not all classes are recorded. Please ask in advance of class.
