What you'll learn in this baking class:

A hands-on session to learn how to make the perfect croissants.

  • 2 HR to 2.5 HRS preparation and baking at our Greenwich Village location
  • It includes the preparation of the dough, the butter, the folding techniques and the baking.
  • Theory of the croissant
  • Each participant will make her/his own 15 croissants (including plain, chocolate and almonds)

Refund Policy

Note: This provider has a temporary cancellation policy for COVID-19 related cancellations which is as follows: 

Given the current situation regarding the Coronavirus (COVID-19) situation, we unfortunately, will be canceling this weekend classes (Friday, Saturday, and Sunday). We take the health the wellness of our employees and guests very seriously and despite our best efforts, this situation is too risky, especially in a food service environment. During classes we work in close quarters and having this many people at once, around food, and without being able to monitor each participant's condition (as we can with our staff), we feel it best to cancel these classes. 

We will be monitoring the situation closely and we are in the process of working on a solution for any and all people who are unable to attend the classes (cancelled, health related, and/or travel related). Unfortunately at this time we are still sorting out the details and will be offering future dates for those who need to reschedule. Free of charge of course. 

At this time rescheduling requests will not be taken, as we do not know nor can we predict how this will play out. But rest assured, we will have classes and space for everyone affected once things settle down. To reiterate, we are processing all cancelations free of charge, regardless of how much advance notice is given. We plan to have those who cancel sign up for future classes, however those dates are not yet set. 

I am maintaining a list of people to contact and offer the make up classes too, once the situation settles down and we can determine those dates. While we prefer to keep the booking and reschedule them later, for those who want full refunds, we are offering them as well. 


Original cancellation policy (non-COVID-19):

  • If you need to cancel or reschedule any class, a 100% refund will be given if the cancellation is asked prior to 7 days before the class. Please notify us by email: [email protected]
  • If you cancel any class within 7 days, without rescheduling, we will not provide any refunds. 
  • If you need to reschedule any class with less than 7 days notice, we will do our best to accommodate you, but there are no guarantees. Please note there is a $70 rescheduling fee per person paid directly to Mille-Feuille. Please email [email protected] for more information.
  • If you are a “no-show”, we will not provide any refunds.
  • In the event that Mille-Feuille cancels a class, 100% of the class cost and fees will be refunded.

hi! what is the maximum number of folks available for this class? Could we perhaps do up to 15 folks if we book far enough in advance? thanks

Hi there! The maximum is 8 spots for each class. The absolute maximum number they can take is 12 students which are a tight squeeze and does slightly lower each individual's yield (i.e. instead of 24 macarons/person, a class of 12 would have 16 macarons/person). Hope this helps!

Hello, I'd love to get this class as a gift for my husband because we love croissants and just went on our honeymoon in Paris a month ago. I'm just hesitating to order it because he has a nut allergy, as long as he is not touching or eating them it's fine if someone is cooking next to him using almonds, but what do you think? Hi Diane! In this class, you will make plain, chocolate, and almond. The possibility of cross-contamination does exist, from their almond provider, within the school kitchen, and during the class. Any student is welcomed and allowed to skip a filling, however, you will work in tight quarters and the other students would be using almond.

Additionally, all croissants are placed into the oven and baked at the same time; albeit on separate trays. For severe allergies, the school usually err on the side of caution and do not recommend the risk.

I don’t recall the name of my instructor but, I will say that the class was very informative, our instructor made the process of making croissants very approachable. The class is definitely worth it for those who want to expand their food knowledge into baking and pastry making. What we made was very good and I would highly recommend it.

I had a great time at this class! Pauline was our instructor and she was very nice and made the croissant-making process very accessible. It is a 2.5 hour class but does not feel that long at all. And, of course, at the end of the lesson, you get to go home with what you made. I think baking has the stigma of being a little intimidating, but this class made me realize how surprisingly simple it is to make something good. It was a great class that ended deliciously!

I enjoyed the class. I'm not very good at English, but I could easily understand. And Nicola is very knowledgeable and good at explaining. The class size and atmosphere were good too!!
