Class Description

Description

The culinary traditions of Asia have long celebrated the art of creating complex, deeply satisfying soups and stews. Asian ingredients bring profound layers of flavor and umami, the savory fifth taste that makes home-cooked Asian soups and stews among the most gratifying and comforting dishes to prepare and enjoy in your own kitchen. This hands-on cooking class explores the distinctive techniques and ingredients that define authentic Asian soup and stew preparation across multiple regional cuisines.

Dishes You Will Prepare:

  • Kimchi Jjigae: An authentic Korean stew featuring fermented kimchi, tender pork belly, and chewy rice cakes in a bubbling, aromatic broth
  • Tom Kha Gai: A signature Thai coconut soup infused with fragrant lemongrass, fresh galangal, and succulent chicken pieces
  • Pho Bo: A traditional Vietnamese beef noodle soup featuring a richly developed broth, tender beef, fresh rice noodles, and a selection of fresh herbs and aromatics
  • Chinese Wonton Soup: A classic Chinese preparation featuring handmade wontons in a savory broth, representing the importance of fresh preparation in Asian cooking

In this collaborative hands-on workshop, you will master the techniques that create authentic flavors in these beloved Asian dishes, learning how to build layers of umami through proper ingredient selection, timing, and cooking methods that distinguish professional results from casual preparation.

School Notes:

For NYC In-Person Classes:

You’ll receive a complete recipe packet and enjoy a full sit-down meal at the end of class with your classmates. Our classes are BYOB, and you are welcome to bring a bottle to enjoy at the sit-down meal (not including our baking or dessert classes).

Our classes are hands-on, coupled with demonstration-style teaching. Everyone is situated at their own cutting board/chef’s knife station around a large wooden work table that accommodates the whole class (10 people max). We work together as a group, with the chef at the head of the table.

We focus on knife skills, preparing ingredients for cooking, and we strive to find every opportunity to offer you a hands-on experience at the stove and at your station, all within the spatial parameters of a single stove/family-style kitchen. We ask for volunteers to assist in all cooking.

Refund Policy

For Public Classes:

We have a firm 3 business days cancellation policy (for credit only) to ensure that we have enough time to re-fill your seat with another student.

Please note: Boot Camps require 6 business days notice to be rescheduled.

While it is not in our nature to say no, we are simply not able to accommodate last-minute illnesses or work-related conflicts. However, you are always welcome to send someone in your place, because we understand that these things do happen. Classes are not refundable.

 For Culinary Boot Camps:

Because of the volume of Boot Camps we offer, we cannot offer make-up classes to anyone who misses a single class, no matter the reason, as it happens too often and we cannot handle that volume of make-ups.  Once you book your boot camp, make sure to mark (and prioritize) all the dates in your calendar.

Because we know how disappointing it is to miss a class, you are always welcome to send a friend in your place (just send us their name ahead of class), and perhaps insist that they cook you dinner as repayment.

In any event where a customer wants to cancel their enrollment and is eligible for a full refund, a 5% processing fee will be deducted from the refund amount.

 Thank you for understanding!

Genuinely loved Al. He was very attentive and gave everyone an opportunity to cut/ taste/ smell. He didn’t just follow the recipe exactly and allowed people to tweak it as we go, which made a much more fun and interactive experience. other than learning the ingredients of the recipes, i also learned tricks, tips, and techniques. Thank you again Al!

This class is amazing!! All the soups were great. The chicken lemongrass soup was a surprise and the hot and sour soup was definitely not your typical hot and sour soup you get from your typical Chinese take out. My absolute favorite is the kimchi jjigae. The flavor is deep but easy to make. The chef was amazing as well. I’ve had him a few times and he makes you feel at ease and gives you random facts and tidbits about the dish. This class is definitely a must, especially around the winter time.

Erica was a really good teacher. She gave many alternatives for ingredients we might struggle to find. She taught us how to devein scrimp and explained why certain things were done in the kitchen.
