This hands-on class is for sourdough bakers who want to bake more successfully with naturally leavened dough. Once you have a sourdough starter or culture, the possibilities are endless! In this intermediate-level class, you will learn to troubleshoot your everyday sourdough baking, improve your loaves, and create a more diverse assortment of naturally leavened baked goods. You'll practice adding freshly milled flour and inclusions like dried fruits and seeds to your loaves. You'll explore higher hydration with focaccia and whole grains. You will practice shaping, scoring, and folding techniques with baguettes, batards, and artistically scored boules. You'll also master the timing and maintenance of sourdough, even with your unique room temperature conditions.
Most importantly, this is a forum to address your sourdough questions and troubleshoot common bread-making issues related to ingredient variations and weather changes.
