What you'll learn in this pasta making class:

Pasta for breakfast, lunch and dinner? SIGN US UP!!! In this weekend-long boot camp, you'll learn the ins and outs of pasta--everything from different pasta doughs to sauces and fillings to pasta equipment like sheeters, extruders, chitarras and more.

Students will work in pairs, building basic skills, and adding to their competencies over the course of one weekend together. As film director Federico Fellini once said, "Life is a combination of magic and pasta," and we couldn't agree more.

Students of all skill levels will be able to keep up in this class. Beginners will quickly gain new skills, and seasoned cooks will refine existing skills while also building new ones.


  • Egg Dough
  • Ravioli Dough
  • Semolina Dough
  • Garganelli with proscuitto and peas
  • Ricotta Agnolotti with fava beans and mushrooms
  • Tagliatelle with bolognese sauce
  • Cavatelli with marinara, cherry tomatoes and basil
  • Parpadelle with pesto and summer squash
  • Gnocchi with corn, asparagus and Pecorino


Tools: Learning to make pasta using sheeters, extruders, chitarras, and various cutters

Ingredients: Understanding the differences in flours, colors, and flavors in pasta

Techniques: Numerous varieties of laminated, stuffed, cut, and free-form pastas

Prepping Ahead: Drying pastas, and freezing pastas, sauces, and fillings for later use


Q: What to Wear
For safety reasons, please wear pants, close-toed shoes with rubber soles, no long dangling jewelry, and have long hair either tied back or covered.

Q: What to Bring
We've got you covered! You just bring you, and we'll handle aprons, towels, tools, recipes, pens, and the rest.

Refund Policy
Refund & Withdrawal Policy Student must inform the Director of Admissions in writing seven (7) days prior to the start of the first series class. After that time, the cost of the series classes will be nonrefundable.

There is no partial credit granted.
