In this three-hour class, Chef Monti Carlo teaches you how to choose high-quality eggs and how to tell if your eggs are fresh. You will make 3 egg-based recipes including a poached egg with hollandaise, a French omelet, and baked meringue with pastry cream. You’ll work with local, seasonal ingredients and have the time to sit and enjoy your creations with your fellow classmates.

If students are interested in requesting a refund, we are currently waiving the $10 cancellation fee. Students still have to option to transfer to another class, instead of a refund.
We reserve the right to cancel any class offering if the minimum number of student enrollments necessary to support it is not achieved. You will be notified no less than the day prior to the start of the first session if an offering will be cancelled by Community Services and offered either a transfer of your fees to another class offering or a full refund.
There are no refunds after a class has begun. Student requested refunds must be made 48 hours before the class begins. There will be a $10 processing fee per class.
Note:Refunds are not issued for absences nor prorated for late registration. Missed class meetings may not be made up in another class.
