Description

What you'll learn in this chocolate making class:

Curriculum Outline:

This course is an introduction to beginning and intermediate chocolatiering and is not suitable for students already experienced in chocolate making
  • Reading will be assigned prior to coming to class which will go over history, theory, and basic principles
  • Master tempering: learn seed method tempering by hand, students are taught traditional methods, no machines will be utilized in training as mastering tempering is an essential skill and the foundation of chocolatiering
  • Learn various ganache recipes and techniques
  • Enrobing
  • Working with fresh and dry plant materials including herbs, flowers, tea/coffee, spices & more
  • Nut fillings & pastes 
  • Candy making including: caramel, non corn syrup marshmellow, fondant
  • Mastering  working with molds
  • Decorating
  • Hygiene, food prepping, safety, longevity, storage
  • Business formation & licensing rules
  • Detailed handbook is provided
Required Supplies:
You will need to purchase items to work during class, a detailed list will be included once registered which will be required

Learning Environment:
  • The program is taught at the Chamak shop, a small 750 square foot boutique shop
  • Hands on training is held in our 225 sq foot kitchen using traditional methods of chocolate making by hand (no machines are used during class)
  • We believe in classical techniques of handcrafting and small batch chocolatiering  as is taught in culinary schools. If you are looking for a commercial production based education we would advise prospective students to research international programs or locate internships at large scale chocolate corporations
  • Chamak is a small and growing company and we introduced this program in 2017, we are excited to continue expanding and slowly are investing in machines

Refund Policy

There are no refunds for class unless class is canceled or there is a documented emergency causing student to cancel. There is a rescheduling fee if student wants to transfer to different class.
