What you'll learn in this cheese class:

Discover the art of making nut-based cheeses. Chef Traci will guide you with hands-on instructions on the techniques to make delicious creamy cheese using cashew nuts. You will learn how to make three kinds of popular cheeses - cheddar cheese, blue cheese and parmesan cheese. As a bonus, cheeses are dairy-free and gluten-free.

Take home your own cheeses and her signature recipes.

Cheeses are made in a food processor. Traci has 6 food processors available for use, first-come, first serve basis. You can usually reserve one, but if not, you are welcome to bring your own.

Lovely afternoon in a lovely house in Berkeley. Everything has been tested by Chef Traci, questions are encouraged and you go home with loads of nut cheeses (which are really expensive in the stores) - as well as the recipes and muscle memory of making them yourself. These are very doable recipes that taste great - they are not so complicated that you couldn't make the exact same product again and again at home anytime you wanted to. I really recommend this class.
