Discover the Best Butchery Classes in San Francisco

Butchery is one of the oldest trades that people still enjoy today. A detail-oriented craft that has been refined over thousands of years, butchery is the art of selecting, slaughtering, deboning, cutting, and preparing meat. It relies on a combination of finely-honed skills and high-quality tools and emphasizes getting the best cuts from the finest meats, a practice that stands in stark opposition to the mass-produced industrial meat products of modern society.

Butchery dates back over 400,000 years with the earliest documented site in Kent, England. A craft focused on harvesting the best cuts with the least amount of waste possible, butchery is now even considered an art form. Independent butcher shops have seen a rise in popularity as society becomes more intentional about what they consume and how they source it.

Becoming an expert butcher can improve the experience of your homemade meals and help support sustainable farming. A butchery course can teach you to create truly memorable farm-to-table food experiences, for both loved ones and customers. Whether you’re exploring butchery as a new hobby or profession, there’s much to be gained from practicing this ancient and intentional set of skills.

Why You Should Learn Butchery in San Francisco

Now known as Bayview Plaza, this San Francisco neighborhood was once known as Butchertown. Reaching the peak of its heyday in 1906, Butchertown was home to hundreds of butchers, cowboys, and other workers that helped keep the booming slaughterhouse industry going. The butchery scene in San Francisco now is decidedly more sustainable and small, but it likely wouldn’t exist without the rich history of butchers and slaughterhouses from the past. These deep roots, combined with the top-notch food scene, make San Francisco a great place to learn butchery.

Becoming an expert butcher is ideal for those who value environmentalism, as you can locally source meat and minimize waste by harvesting every usable part of the animal. You can foster a deeper connection to your food and the environment, ensuring your dishes are healthy, wholesome, and earth-friendly.

Becoming an expert butcher can also help you save money. You can stock up on meat by buying large portions directly from a local farm and butchering the prime cuts yourself. Cutting out the middleman by handling the processing and packaging on your own can help limit your financial waste, too.

A particularly niche industry, learning butchery can also grow your community and help you meet new people. Local butcher shops are often central to their communities with expert butchers forming bonds based on trust and respect with their neighbors and local businesses.

This, of course, also makes it a great potential profession, especially with the current cultural shift away from factory farming towards less harmful, more sustainable ways to source food. A quality butcher shop can be an essential business in any community, connecting ranchers to customers, and making farm-to-table practices more accessible.

In-Person Butchery Classes in San Francisco

The Local Butcher Shop in Berkeley is an established butcher shop that prides itself on only buying whole animals so they can butcher any imaginable cut on the spot. They offer classes to the public, led by their butchers that are also trained chefs.

Their half-hog butchery demo class helps students learn all about the anatomy of a pig and whole animal butchery techniques. There will be a discussion on raising pigs sustainably and humanely, as well as a chance to talk about the best ways to cook various cuts. Plus, each participant will take home 9 to 10 lbs of Llano Seco pork!

They also offer a fish butchery class that is hosted in collaboration with Sea Forager, a community-supported fishery. Each student will be given two pounds of whole, local, sustainably-sourced fish that they will then scale, gill, gut, filet, and debone. There will also be a discussion of local fisheries and sustainable seafood and a chance to get answers to all your seafood cooking questions.

Their poultry butchery class is open to all levels and offers a hands-on approach to learning the anatomy of the chicken. Each participant will butcher two chickens and can take it all home with them at the end of class. Instructors will discuss the best ways to butcher, chicken, turkey, and other small birds for a variety of cooking methods.

Similarly, their pork leg butchery class offers both demo and hands-on experience. Students will learn how to bone out a leg, cut muscles along the seams, tie roasts, slice the pork for scallopini or steaks, and use the trim to make sausage. There will be approximately 12-13 pounds of meat to take home for each student.

Virtual Butchery Classes

Online butchery classes are a great option when in-person classes won’t work for you. You can attend from wherever you want and, with on-demand classes, you can choose when you attend as well. Plus, studying from the comfort of your own home in your favorite pajamas can make the experience even more enjoyable. There’s also no need to stress about traffic or struggle to find parking. While you generally are required to source your supplies and tools, online butchery classes still have the benefits of an expert instructor and the hands-on experience that in-person classes offer.

Virtual Building Blocks: Chicken Butchery and Cookery is an informative online class offered by The Chopping Block Lincoln Square. Held via Zoom, this two-hour workshop teaches how to select quality poultry and properly butcher and prepare a chicken.
