Plus, each participant will take home 9 to 10 lbs of Llano Seco pork!

They also offer a fish butchery class that is hosted in collaboration with Sea Forager, a community-supported fishery. Each student will be given two pounds of whole, local, sustainably-sourced fish that they will then scale, gill, gut, filet, and debone. There will also be a discussion of local fisheries and sustainable seafood and a chance to get answers to all your seafood cooking questions.

Their poultry butchery class is open to all levels and offers a hands-on approach to learning the anatomy of the chicken. Each participant will butcher two chickens and can take it all home with them at the end of class. Instructors will discuss the best ways to butcher, chicken, turkey, and other small birds for a variety of cooking methods.

Similarly, their pork leg butchery class offers both demo and hands-on experience. Students will learn how to bone out a leg, cut muscles along the seams, tie roasts, slice the pork for scallopini or steaks, and use the trim to make sausage.
