Description

Explore craft chocolate with Chocolate Queen Rhonda Kave, including its origins, how it is made and what distinguishes its quality.

This experience takes you on a journey from bean to bar, traveling across the cocoa-growing world through 24 individual samples featuring origin cacaos from multiple countries and regions. Along the way, you will taste chocolates from acclaimed craft makers and develop a genuine vocabulary for evaluating and appreciating chocolate at a new level.

Note: Guests must show proof of vaccination to attend.

Event Itinerary:

  1. Guests arrive, check in, and store coats and bags.
  2. Weather permitting, guests are welcome to wait in the backyard garden while the full group assembles.
  3. Once everyone has arrived, the group moves inside to begin the guided tasting at dedicated tasting stations.
  4. Wine is served, and guests enjoy an interactive guided tasting and discussion lasting approximately 40 minutes.
  5. Each guest receives one of the shop's handcrafted chocolate truffles as an inspirational interlude.
  6. Participants don aprons and learn the craft of making chocolate ganache; the ganache container is taken home as "homework" for further practice.
  7. Gloved and ready, everyone hand-rolls and finishes a dozen truffles, choosing from a selection of toppings.
  8. Finished truffles and ganache are packed up to take home, along with a printed recipe card for basic truffles.
  9. Satisfied guests depart with chocolate memories and full bellies.

About the Instructor:
Classes are taught by Roni-Sue herself or by Shop GM Sharon. Roni-Sue has been crafting confections for more than 30 years and has spent the past five years teaching a bean-to-bar STEM-focused after-school program for the New York City Department of Education. Both Roni-Sue and Sharon are partners in a bean-to-bar chocolate factory in Belize, where they learned firsthand the full arc of cacao cultivation and chocolate production.

About the Venue:
Classes take place in the production kitchen, classroom, and event space on the Lower East Side of Manhattan, featuring 1,000 square feet of flexible indoor space and a spacious, partially tented backyard garden. As venues go, a working chocolate shop is hard to beat.
