NYC: Make & Take Chocolate Truffle Class
Immerse yourself in the world of chocolate at this exciting event, which is held in a chocolate shop. Here, you’ll work double-duty in the production kitchen and classroom and become more skilled in chocolate making. Please don’t hesitate to join us for our chocolate tasting and learn to make chocolate ganache with panache. You’ll also learn how to hand-roll a dozen truffles to take home for your family. Even better, you can head out back and relax in the outdoor garden.

Description
Ever wish you could make your own rich chocolate truffles?? Well, now you can! Let Roni-Sue show you how it’s done. She’ll show you the secret of ganache making and all the cool stuff you can do with it! Love chocolate covered strawberries?? Wait’ll you taste how great they are dipped in fresh chocolate ganache! [swoon]. Next up, you’ll hand roll and finish a dozen truffles to enjoy.
All the while, Roni-Sue is sharing her tips and tricks for making your own custom flavored chocolate ganache fillings and upping your sweets game in general.
You’ll go home with your handmade truffles and a container of ‘homework’ ganache to make more truffles later on. Best. Homework. Ever.
Note: Guests must show proof of vaccination to attend.
Event Itinerary:
- Guests will arrive & store their coats & bags, etc.
- Weather permitting, guests can await the rest of the party in our backyard garden.
- Once everyone is present, we'll move inside to our tasting stations to begin the guided tasting.
- Wine is poured and guests will be treated to an interactive discussion and craft chocolate tasting lasting approximately 40 minutes.
- After the tasting guests enjoy one of our handcrafted chocolate truffles for some inspiration.
- Next, we'll don our aprons and learn to make chocolate ganache (container is taken home for 'homework').
- We'll then outfit everyone with gloves and hand roll and finish a dozen truffles using several different toppings.
- We'll then pack up the truffles and ganache we made and everyone will receive a handout with the recipe for basic truffles.
- Satisfied guests head back out into the real world of NYC, bellies filled with chocolate!
What You Will Make / Go Home With:
Each guest will go home with:
- A box of truffles they made.
- Extra ganache to make more at home.
About the Instructor:
Classes are taught by Roni-Sue herself or by our GM Sharon. Roni-Sue has been making confections for over 30 years and teaching a bean-to-bar-to-business STEM focused after school program for the NY Department of Education for the last five years. Both Roni & Sharon are partners in a bean-to-bar chocolate factory in Belize where they learned all about growing cacao and making delicious chocolate from it!
About the Venue:
Our production kitchen/classroom/event space on the LES has 1,000 sq ft of flexible indoor space and a large beautiful (partially tented) backyard garden. Everybody wants to party in a chocolate shop!

It was great! Really enjoyed the tasting and learned so much about chocolate and the different types. Had a blast making the truffles and loved that it is an easy recipe I feel I can replicate at home. Thanks so much for the experience!
