Description

Make fresh mozzarella in your home kitchen, ready to use on pizza, pasta and other Italian dishes.

Your Group Will:

  • Discover the science of coagulation, understanding how milk transforms from fluid to firm curds
  • Watch a professional demonstration showing exactly how mozzarella is made
  • Roll up your sleeves and practice turning curds into beautiful balls of fresh mozzarella

Learn to choose curd, control water temperature and salt, and pull and fold mozzarella.

No prior experience is required to successfully complete this class.

Materials Needed to Participate Fully:

  • 1 teaspoon rennet in either animal or vegetable form, tablet, or liquid
  • 1 teaspoon citric acid

  • A sauce pot with a well-fitting lid, sized to hold a gallon of milk
  • A colander with small holes or a fine mesh strainer
  • A liquid thermometer for accurate temperature monitoring
  • A large mixing bowl that your colander will fit into
  • A sauce pot for heating water, approximately 2 quarts capacity, or an electric kettle
  • Any knife that will cut through soft curd
  • A slotted spoon
  • Rubber gloves, recommended if your hands are sensitive to heat
  • Ice for the ice bath at the end of the process

The virtual mozzarella-making class I took was so fun! I've tried to make mozzarella on my own before and wasn't able to do it, it was difficult to know exactly where I went wrong. With the help and encouragement of the teacher in this class, I really was able to make fresh mozzarella!

Carolyn did a really wonderful job with our class. We had so much fun learning a brand new skill, making cheese was so fun! She was super knowledgeable and led us patiently through each step. We loved taking a class with her, especially from the convenience of our own home. We made a date out of it! Would definitely recommend it to friends.

A friend and I signed up for the virtual mozzarella-making class and we could not have been happier. It was such a fun night and we ended up with some delicious cheese when it was over. The process was so easy we got a comprehensive list before the class and the format was easy to follow. Would highly recommend this class!

The Coursehorse ‘Virtual Mozzarella Making’ course was a revelation - one brilliant teacher and 5 keen, open-hearted students working together on zoom - following clear instructions to do battle with milk, rennet, and hot water. 90 minutes later I had become a one-woman pizza station. I adore cheese, but never considered that I might be capable of making it. This class is a joy.

We loved the class. Carolyn was a great instructor, made it fun, and made us feel like mozzarella making stars. To top it off the mozzarella we made tasted great, especially with basil, tomato, balsamic glaze and of course a glass of wine.

This probably would have been 5 stars if the class was not virtual. The leader was amazing! She was friendly and supportive and took time to assist when one of the participants needed to catch up. The only problem was that there were three participants, one who just viewed because she didn't have all the supplies, and two others, myself included, who attempted to make the mozzarella remotely. Both myself and the other "chef" were not able to make the cheese, mine because the curds were too small and didn't congeal and the other because the curds were too dry and fell apart. The culprit appears to be the rennet that we used, but if the class was in person it might have been apparent that we needed to adjust the recipe in time to have it come out properly. So the lack of the final star wasn't at all due to the leader or the course itself but most likely due to the inability of the instructor to closely view the process.

She is so lovely and amazing. I didn't get my rennet in time so I sat in on the class and still learned so much. I feel confident to try it on my own and really can't wait to take another class with her again soon!

We thought the instructor was extremely personable and patient. Unfortunately our curds didn’t even begin to work so we didn’t get far.

Carolyn is a wonderful teacher and has a captivating, engaging, and energizing presence. Her instruction is thorough and inclusive, and she makes sure to individually touch base with every member of the class to ensure no one gets left behind. While I ultimately didn't end the class with useable mozzarella (I seem to have had an issue with the rennet), I joked with Carolyn that I've never had so much fun failing a class. Carolyn shared her personal email to follow up afterwards, and I look forward to re-taking the class once I order new rennet. I highly recommend this class!

My cheese didn’t come out right. I think there was a discrepancy in the ingredients as to what’s better to use. Since cheese making is a science I think it would be beneficial to all have the same ingredients. Loved the teacher though!
