What you'll learn in this bread class:

Once you have a sourdough starter or culture, the possibilities are endless! In this virtual class, learn how to use your starter to produce a wide variety of baked goods, including pizza, New York Bagels, fruit and nut loaves, focaccia, and cinnamon rolls. 

Practice shaping, scoring and all the folds with baguettes, batards, and artistically scored boulés. Master timing and maintaining your starter. In addition, you’ll have a forum for addressing your sourdough questions and troubleshooting bread fails, handling higher hydration, and weather changes.

Intermediate Sourdough Baking (formerly Advanced Sourdough Baking) is a series of 8 live virtual classes, meeting on Sundays November 21st - January 16th at 5:00-7:00 pm Eastern Standard Time. We recommend that you commit to attending each class, however, all classes will be recorded for your convenience, and Chef Laura is available for ongoing personal baking coaching!


  • November 21st - Focaccia, starter, sourdough tests
  • November 28th - Italian Style Pizzas, levains & pre-ferments
  • December 12th - Ciabatta, hydration, folds and lamination
  • December 19th - Cinnamon Rolls, enriched dough
  • December 26th - Fruit, Seed or Nut studded Batards and Boulés, add-ins, shaping
  • January 2nd - New York Style Bagels, proofing
  • January 9th - English Muffins, discard
  • January 16th - Baguette and Artfully Scored Loaves, scoring


A detailed list of ingredients is provided at least 1 week before each class session. Each session involves live interactive demonstration, hands-on baking and requires some advanced prep and follow up steps.

The only items you truly NEED are an active SOURDOUGH STARTER, FLOUR and WATER. We can figure out the rest…

All ages welcome and encouraged.

Prerequisite: this class assumes you already have a sourdough starter and have baked at least one loaf of sourdough. If not, check out our Beginners course!

Class is live and meets via Zoom. You get ongoing access to:

  • session recordings, course materials, and recipes
  • personalized on-demand sourdough coaching
  • tips and reminders via email
  • our Sourdough Community on Slack
  • priority for our Advanced Sourdough Baking course launching in February

Remote Learning

This course is available for "remote" learning and will be available to anyone with access to an internet device with a microphone (this includes most models of computers, tablets). Classes will take place with a "Live" instructor at the date/times listed below.

Upon registration, the instructor will send along additional information about how to log-on and participate in the class.

Refund Policy

For single-session public events or classes or single days within multi-day classes:

  • If student cancels 7 or more days before the class/event start time, student is eligible for a cash refund (less a 7% processing fee) or a credit voucher (100% of purchase price) towards another Teaching Table class/event.

  • If student cancels 2 or more days before the class/event, student is eligible to apply the payment towards another Teaching Table class or event, including private classes and events.

  • No shows cannot be refunded. Cancelling after the cut off, withdrawing, or failing to attend results in forfeiting the full amount of the class or event fee. Student may send someone else to participate and/or receive materials. Not all classes are recorded. Please ask in advance of class.
