What you'll learn in this kids cooking camp class:

INGREDIENTS: Since you will be purchasing the groceries for these camps, there is a lot of flexibility if your child or family is vegetarian, gluten-free, nut-free, kosher, etc. Please ask us about any and all ingredient alternatives!  

CLEAN-UP!: To ensure that parents are not left with a tsunami of dishes at the end of every class, rest assured that we are devoting 15 minutes at the end of every class to kitchen organization and clean-up.  

SESSION DATES:  This is a 4-day program (Monday-Thursday), occuring at the same time each day for 4 days, with two 2-hour sessions to choose from each week; you'll select your preferred start date + time when registering. 

SECTION A

DAY 1:  ITALIAN

  • Fresh Ricotta Gnocchi
  • Classic Marinara Sauce
  • Kale Salad with Parmesan

DAY 2: ASIAN

  • Asian Salad Wraps
  • Chicken (or Tofu) Stir-Fry
  • Steamed Rice

DAY 3: MEXICAN

  • Pineapple Salsa + Pickled Red Onions
  • Spiced Black Bean-Corn Tacos

DAY 4: SUMMER PICNIC

  • Panzanella Salad with Fresh Mozzarella or Tuna
  • Roasted Peaches or Plums with Vanilla Creme Anglaise

DAY 1: BRUNCH

DAY 2: INDIAN

  • Chicken Tikka Masala Basmati Rice Pilaf

HOW THESE VIRTUAL CLASSES WORK:

1) Two weeks before your scheduled week of camp, we'll send out the full shopping list for the week (a sample of which is below)-- we are committed to making this a very manageable shopping trip/order --  and a recipe packet for future reference (they do not need to print out, unless they want to). You'll also be sent a Zoom link to join us each day.


2) Each camp runs Monday-Thursday of each week; classes are 2 hours long, with at least 15 minutes devoted to kitchen clean-up at the end of each class. 


3) For once, we can teach literally anyone on the planet (not just New York City kids!), so please feel free to pass along the class info to any of your children's far-flung friends or cousins. 

SHOPPING LIST for KIDS COOKING CAMP, SESSION A

Because grocery shopping is not so easy these days, here is a sneak peek at what you will need in case that is helpful. (These quantities will feed a family of 4 per class.)

PRODUCE

  • 1 large bunch kale
  • 1 head garlic
  • 1 bunch fresh cilantro 
  • 1 bunch fresh basil
  • 1 bunch scallions
  • 1 orange or yellow bell pepper
  • ½ pound snow or snap peas
  • 1 pack small Persian cucumbers or 2 large
  • 3 carrots
  • 2 red onions
  • 1 head Boston or Bibb lettuce
  • 2 ripe avocados
  • 4 plum tomatoes or 2 pints cherry tomatoes
  • 1 small piece fresh ginger
  • 1 lemon
  • 3 limes
  • 4 ripe peaches, plums, nectarines, or any fruit really (about 1 ½ pounds)
  • 1 ripe pineapple
  • 2 ripe mangoes

GROCERIES

  • 1 cup heavy whipping cream
  • 1/2 cup grated Parmesan cheese (or a 5 ounce block for grating)
  • 1 pound ricotta cheese
  • 1 pound fresh mozzarella, 1 can chickpeas, OR 2 cans tuna (for panzanella)
  • 1 pound boneless chicken breast or thighs, or extra-firm tofu
  • 1 loaf crusty white bread
  • 2 cups jasmine rice
  • 2 15-ounce cans black beans
  • 1 28-ounce can whole tomatoes
  • 1 cup frozen corn kernals or fresh
  • 1 pack corn or flour tortillas
  • Corn chips (optional, for guacamole)

STAPLES FOR THE WEEK:

  • Extra virgin olive oil (about 1 cup)
  • Salt and pepper (we prefer kosher salt, so the kids can see/feel it when seasoning)
  • 1 stick unsalted butter
  • 1 cup sugar (any kind)
  • 4 eggs
  • Vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons soy sauce
  • Vinegar: rice or red wine or cider 
  • Dried spices: smoked paprika, cumin, oregano
  • 2 tablespoons capers or Kalamata black olives (optional)

Remote Learning

This course is available for "remote" learning and will be available to anyone with access to an internet device with a microphone (this includes most models of computers, tablets). Classes will take place with a "Live" instructor at the date/times listed below.

Upon registration, the instructor will send along additional information about how to log-on and participate in the class.

School Notes:

You’ll receive a complete recipe packet and enjoy a full sit-down meal at the end of class with your classmates. Our classes are BYOB, and you are welcome to bring a bottle to share at the sit-down meal.

Our classes are hands-on, coupled with demonstration-style teaching. Everyone is situated at their own cutting board/chef’s knife station around a large wooden worktable that accommodates the whole class (10 people max). We work together as a group, with the chef at the head of the table.

We focus on knife skills, preparing ingredients for cooking, and we strive to find every opportunity to offer you a hands-on experience at the stove and at your station, all within the spacial parameters of a single stove/family-style kitchen. We ask for volunteers to assist in all cooking.

Refund Policy

We have a firm 48-hour cancellation policy to ensure that we have enough time to re-fill your seat with another student. For cancellations prior to the 48-hour mark, we are happy to offer credit for a future class. 

Non-refundable, credit only.

While it is not in our nature to say no, we are not able to offer credit/refund for last-minute illnesses or work-related conflicts. However, you are always welcome to send someone in your place, because we understand these things do happen.

Missed Class Policy

What can I do if I have to miss a class during a Boot Camp?

We understand that finding 6 consecutive weeks on your calendar to book a Boot Camp can be challenging, but because of the volume of Boot Camps we offer, we cannot offer you a make-up class if you cannot make one or more of the classes. As a consolation we have two options, for those who need to miss a class within a Boot Camp series:

1) Send a friend in your place (and make them cook you a meal based on their new skills, as repayment!), or

2) Opt for our "Plan B" program:

You are welcome to attend any of our classes that still has an open seat 48 hours before it runs. That way you can take another class and we are just filling empty seats, as opposed to giving you a seat in a future class that would otherwise have been paid for. This does require that you keep tabs on our schedule to see what is available (the number of open seats is part of every class listing)

Plan B does not have any expiration date; just be in touch with me directly when you find a class that works for you.
