What you'll learn in this chocolate making class:

Ever wish you could make your own rich chocolate truffles?? Well, now you can! Let Roni-Sue show you how it’s done. She’ll show you the secret of ganache making and all the cool stuff you can do with it! Love chocolate covered strawberries?? Wait’ll you taste how great they are dipped in fresh chocolate ganache! [swoon]. Next up, you’ll hand roll and finish a dozen truffles to enjoy.

All the while, Roni-Sue is sharing her tips and tricks for making your own custom flavored chocolate ganache fillings and upping your sweets game in general.

You’ll go home with your handmade truffles and a container of ‘homework’ ganache to make more truffles later on. Best. Homework. Ever.

    We really enjoyed this chocolate truffle making class. It provides a great foundation for making truffles, and the class was such fun (with quite a few yummy chocolate covered treats). Roni-Sue is a wonderful fountain of knowledge, offering many useful tips. The truffles we made looked amazing and so impressive, especially all boxed up!

    Fun class where you get to eat lots of chocolate! Useful if you've never made chocolate ganache before, but very much an introductory course. Good option for a team building exercise or something different with friends.

    The truffle making class that I attended a few months back was absolutely amazing. I felt very lucky that my friend and I had the space to ourselves to create chocolate masterpieces. The instructor was very kind and provided us a small breakfast since our class was early in the day. P.S. that snack included chocolate. The chocolate-covered strawberries and chocolate-covered bananas were absolutely tasty. The truffle making experience was simple and to the point. The best part was that you get to take a box of chocolates home along with the ganache that you made for your chocolate strawberries and frozen banana pops. I would definitely recommend this class to all chocolate lovers.

    I absolutely loved this class--it was wonderful to learn more about what aspects of the processing or growing process produces different types of results in chocolate. I also very much appreciated the accommodation the teachers made so that I could take part in the class (I got injured and couldn't stand at the prep table; they got a smaller table and chair so that I could still attend.)

    The chocolate was delicious and learning the process was fun. However, there was not enough focus on the chocolate-making versus chocolate industry. We did not get to role or form the truffles in class which was a downer.

Hi, I am allergic to gluten but interested in this class. Can you tell me if any of the ingredients used contain gluten?

Hi Lenora! They normally offer crushed gingersnap cookies as one topping choice in the class. They could eliminate that option if you join as cross-contamination often occurs when folks are using the different toppings to finish their truffles. To be clear, they are NOT a gluten-free facility— they bake in their kitchen with gluten. There’s definitely aerosolized gluten & only the student can make the call if it’s ok or not.

Hello, I want to know if you will teach how to make truffles with nut butter fillings. I came across a brand and love it and want to make my own at home. I am happy to bring along a jar of nut butter with me :-)

Hi, our public classes are already programmed with what we will make so it won’t be possible to incorporate something different on the fly. Also since other students my have nut allergies we don’t want that possible exposure. You can try googling a recipe for “buckeyes” & substituting your nut butter of choice for the usual peanut butter called for in the recipe. Happy experimenting!

Can I bring my own ingredients?

For what purpose? Are you dairy free? We prepare some ganache the day before so it will be set up enough to work with. We also teach you to make some ganache of your own that you take home as well. Bringing your own ingredients won’t work with our format. If you need accommodation for dairy free we can do that for you but it has to happen in advance. There is a $25 fee if needed which can be paid directly on class day.

Hi Amanda, No- our usual materials include local Hudson Valley heavy cream in the ganache. We can make a dairy free version for guests which requires advance notice & an additional fee of $25 to help offset the additional labor. Hope that helps! Roni-Sue
