Taste of Workshop #2 (Non-Vegetarian)
An exciting introduction to Greek cuisine! This 2.5 hour class starts off with a warm welcome to Despina’s home where she will greet you with a cup of Greek mountain tea and a delicious homemade snack. You will learn to make tiropita, a flaky phyllo pie filled with a delicate cheese and egg mixture. Using fresh produce and herbs, you will also learn to make faki, a hearty and aromatic lentil and vegetable soup considered a staple in the Greek kitchen. Lastly, you’ll sit down as a group and enjoy the delicious food you’ve made. You’ll go home with a booklet of recipes and in-depth culinary info so that you can re-create these fantastic dishes at home.Menu:Garides Me To Rizi (Shrimp with Tomato and Rice)
Horta (Boiled Leafy Greens)
- Fresh shrimp simmered with scallions, crushed tomato, and garlic, stirred into rice and topped with fresh parsley.
OR Xoriatiki Salata (Greek Salad)
- Assorted leafy greens, such as chicory and dandelion, briefly boiled and then dressed with Greek olive oil and freshly squeezed lemon juice.
Kourampiedes (Almond Cookies)
- Tomato wedges, shaved red onion, Kalamata olives, and crumbled Arachova feta cheese, dressed in olive oil and red wine vinegar.
- Traditional Greek Christmas cookies made with almonds and dusted with powdered sugar.

You will sit down to a welcome snack of seasonal Greek appetizers, such as Despina’s tangy, succulent stuffed grape leaves, which she will encourage you to dip in yogurt, and her bright, fresh potato salad. She will serve you Greek mountain tea, a medicinal herbal tea with a mild mint flavor that grows wild in Greece. At the end of the day you’ll go home newly inspired with all the recipes and a shopping guide to Despina’s favorite food markets.
