What you'll learn in this international cooking class:

Cooking in Ikaria: A Blue Zone Cooking Class for Health and Longevity with George and Eleni Karimalis

Winemaker George and chef Eleni Karimalis run an organic farm, winery, and farm-stay accommodation on the Blue Zone island of Ikaria in Greece. Eleni and George, who were featured on Diane Kochilas’ My Greek Table (“Flavors of Longevity – Ikaria”) PBS show last year, are doing a U.S. tour this fall, and Miette Culinary Studio is their New York City stop.

On Sunday, George and Eleni will lead the class in preparing:
  • Roasted Pumpkin with Garlic Dip made from potatoes
  • Baked Chickpeas
  • Pittarakia: delicious tiny vegetable pies made with fresh filo from scratch, stuffed with seasonal greens, onions and carrots
  • Sourdough Bread made from scratch
  • Signature All-natural breakfast spread
There are 6 blue zones in the world, where people live healthier, longer lives than average:

  • Sardinia (Italy)
  • Nicoya (Costa Rica)

    The class was a lot of fun. I learned a lot as a result of watching Eleni do her magic -- combining the use of various herbs, demonstrating the art of making and handling the dough for sourdough bread and for pittarakia, and making a sourdough starter. Paul and Lisa did an excellent job of hosting the event.

Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!

There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.
