What you'll learn in this cooking techniques class:

Is there another food with such a cult following and a larger number of fanatics? Probably not. Welcome to the world of “Hot Sauce”: a healthy, fun and addictive way to season almost everything you eat. Learn how to make your own signature hot sauce to enjoy at home or to give as a gift to your friends. 

Learn to: 

● Choose your peppers and work with them safely
● Identify the different types of hot sauces
● Understand the ingredients and balance the flavors
● Give your sauce the perfect texture and density
● Bottle or jar your sauce to last for a long time 


Materials needed to fully participate

● Gloves
● Fresh or frozen hot peppers of your choice (Please check out the Scoville Scale Chart to decide. See below)
● Cider or distilled vinegar (or the vinegar of your choice), lemon or lime juice
● Other ingredients, you may want to flavor your sauce with: vegetables (garlic, onion, carrot, etc) and fresh or frozen fruits (pineapple, mango, etc)
● Salt & Pepper
● Blender, stick blender or food processor
● Cooking utensils: knife, ladle, funnel, mixing bowls, a saute pans, spoons, strainer 

Optional 

● Bottle or canning jar
● PH meter or testing strips
● Xanthan gum 

The Chef Instructor will demo the following sauces:

Serrano and Jalapeño Hot Sauce (mild hot)- Yields 1 Cup approx.

  • 7 medium jalapeños 
  • 5 serrano peppers 
  • 3 cloves of garlic 
  • 1 cup distilled white vinegar

Habanero and Mango Hot Sauce (medium hot) - Yields 1 Cup approx.

  • 4 habanero chiles 
  • 3 cloves garlic 
  • 2 medium carrots, peeled and chopped 
  • 2 tablespoon cider vinegar 
  • 1 tablespoon freshly squeezed lemon juice 
  • 1 mango

About the Instructor:

After graduating in Culinary Arts in Barcelona, I've spent the last twenty years working in professional kitchens all over the world, making my way from comiss chef all the way to executive chef. I've worked in a variety of places, from Michelin starred restaurants to luxury hotels. Currently and for the last four years I've been a chef instructor for home cooks.


Virtual Class FAQ


What will be included in my Virtual Class package?

One ticket includes an access link to your live, online class. The class will be delivered via web conferencing software and feature a live, professional instructor who will walk you through a lesson as described above. You will have the opportunity to ask questions as well as participate from home.

How many people is my purchase good for?

Each ticket is good for one "device" (i.e. one computer, phone, tablet, etc. you'll be logging in from). This ensures we don't get more people in the class than the instructor can handle. Though we understand some people live together and will be working/learning together, the intent is that each class still allows for the same attention to attendees as if students purchased separately. Please be respectful of this!

Will I need anything from home to use in the class?

You will need a reliable Internet connection as well as a computer or device with which you can access your virtual class. We recommend you arrive to class 5-10 minutes early to ensure you're able to set up your device and connection. Additionally, if the class is more than just a lecture you will likely want any materials listed in the course description as "Materials Needed to Participate Fully", though you're welcome to purchase a seat and sit in and just watch.

Am I able to ask questions or interact with the class?

Yes, you'll both be able to ask questions using the chat function in the video hosting software as well as at certain intervals during the class via voice/audio. If the class winds up being on the smaller side, more spontaneous interaction/questions will be encouraged.


Do I have to show my video or speak during class?

While we recommend you do show your video and speak when encouraged to by the instructor, video and audio participation are never mandatory. We find classes have more fun experiences when people are engaging with one another, but understand not everyone will want to do so and that's ok!



Remote Learning

This course is available for "remote" learning and will be available to anyone with access to an internet device with a microphone (this includes most models of computers, tablets). Classes will take place with a "Live" instructor at the date/times listed below.

Upon registration, the instructor will send along additional information about how to log-on and participate in the class.

Guillermo was super knowledgeable about hot sauce making and also provided a lot of interesting information and history as well as ideas for how to adapt recipes to your taste. It was a little changing to both listen and do all the prep and make the sauce simultaneously. My husband and I did the class together and that made it a lot easier. The hot sauces turned out delicious. Overall the class was really fun and definitely worth it!
