Description

What you'll learn in this baking class:

Get ready to start the holiday season  with a new talent for soufflé. Bring your fear of failing with you to this Sunday afternoon class and Chef Paul will show you the right materials to use, and teach you how to create three different kinds of soufflé; a main course savory, a breakfast fruity, and a decadent dessert. A refreshing salad (with a fail-proof French vinaigrette) will clear your palate. You can do it!

Learn to cook the following:

  • Crispy Lettuce Salad with Red Wine Vinaigrette (or baby kale salad)
  • Savory Cheddar Soufflé 
  • Raspberry Soufflé
  • Chocolate Soufflé with Chocolate Fudge Sauce

Note: Students below 18 years old should be accompanied by a parent/guardian.

Miette

Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!

There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.
