What you'll learn in this bread making class:

Are you considering taking the plunge into sourdough bread baking? Or perhaps you tested the waters and want better results. Then this virtual course is for you. A process that develops over multiple days, sourdough bread baking is as simple as it is complicated. By walking you through each step in live classes, with actual demonstrations and trouble shooting our collective bread baking mishaps, we will help you make sense of sourdough. 

By the end of this series, you will have an active starter, understand how to care for it, and will have baked a perfect sourdough boulé using one of my tested recipes. And so that you don’t have to wait two weeks to enjoy some bread, you’ll also learn and bake a quick bread, tortillas, scallion pancakes, and sourdough crackers throughout the course. You will learn no waste methods for developing and nurturing your sourdough starter so that he or she nurtures you for years to come.

Sourdough Bread Baking for Beginners is a series of 6 virtual classes, taught at intervals, approximately the same time each day over 10 days (see schedule below). We ask that you commit to attending each class, however, if you or your sourdough are not ready to bake with us, you can refer to the recorded sessions and printed resources that will be provided. Chef Laura will also be available for personal baking coaching!

Throughout the course, you will learn about what is needed to bake sourdough bread and how to use what you have. I have adjusted and converted my recipes to account for lack of access to commonly used sourdough tools. But, if you must know, here is a list of suggested materials:

The only items you truly NEED are FLOUR and WATER. We can figure out the rest…

  • water
  • flour (ideally organic; from varieties of either wheat, spelt, or rye; stone or farmer ground; or bread flour)
  • glass jars or containers with lids
  • mixing bowls or large plastic containers, (ideally with covers or kitchen towels or plastic wrap)
  • bench/dough scraper or large metal or plastic spatula
  • kitchen scale or measuring cups and spoons
  • basket or bowl for shaping bread
  • parchment paper
  • lame, razor blade or very sharp knife
  • oven
  • dutch oven

  • Friday November 5th, 7:00-8:30 PM, Developing your Starter, Bake: Quick Bread
  • Sunday November 7th, 7:00-8:30 PM, Maintaining your Starter, Bake: Sourdough Scallion Pancakes
  • Thursday November 11th, 7:00-8:30, Creating a Levain, Bake: Sourdough Crackers
  • Sunday November 14th, 1:00-2:30, Mixing and Kneading
  • Sunday November 14th, 7:00-8:30, Shaping, Proofing and Baking, Bake: Sourdough Boulé

Remote Learning

This course is available for "remote" learning and will be available to anyone with access to an internet device with a microphone (this includes most models of computers, tablets). Classes will take place with a "Live" instructor at the date/times listed below.

Upon registration, the instructor will send along additional information about how to log-on and participate in the class.

Refund Policy

For single-session public events or classes or single days within multi-day classes:

  • If student cancels 6 business days or more before the class/event start time (or before receiving course materials), student is eligible for a refund (less a 7% processing fee) or a credit (100% of purchase price) towards another class/event.
  • If it is within 6 business days of your scheduled event, you can transfer your class to another individual or receive the recording and materials of virtual classes digitally.
  • No shows cannot be refunded. Cancelling after the cut off, withdrawing, or failing to attend results in forfeiting the full amount of the class or event fee. With approval of teacher, student may send someone else to participate and/or receive materials.
  • Most, but not all, classes are recorded. Please confirm in advance of class if you will be relying on the recording.

The school reserves the right to cancel an event or class due to low enrollment, inclement weather or other circumstances that would make the event or class non-viable. Public class participants will be notified via email and may elect to receive a full refund less a 5% non refundable registration fee, a class credit, or admission to another class, pending availability.

In any event where a customer wants to cancel their enrollment and is eligible for a full refund, a 5% processing fee will be deducted from the refund amount.
