For me, it all started when a friend introduced me to the health benefits and delicious taste of home-milled flour. I had no idea that the grains we were eating were so stripped of their nutrients by the time they reached the market shelves. Even grains labeled 100% whole wheat have been processed intensely. When was the last time you found bugs in a bag of flour, the way we did as kids? Ever wonder why insects have no interest in our flour anymore? It's got nothing worthwhile left in it!  Even more surprising to me than all this, however, was how easy it turned out to be. Grinding your own grains is even easier than grinding your own coffee beans-- fast and effortless, no clean up, and a huge difference in freshness and flavor.

I bought a grain mill, began cooking simple recipes with whole grains, and never looked back. Since then, I've been grinding flour, rolling oats, making my kids waffles, muesli, grits, sandwich bread, pizza dough, cornbread, pancakes, oatmeal, granola bars, muffins, cookies, polenta, and birthday cakes with nutritious, tasty wholemeal. Getting back to the basics of food led me to explore aquaponics and permaculture next. Simply put, plants filter water for fish, while fish fertilize the plants. It's a Jack Sprat kinda thing. And the result? You get healthy fruits and veggies that use a fraction of the water compared to traditional agriculture, are less prone to disease and pests, and are 100% chemical-free. Aquaponics systems can be as sprawling and ambitious as you want... or as simple as a little bowl on your kitchen counter, with a fan-tailed goldfish helping grow greens and herbs for your dinner salad.

In addition to whole grains and aquaponics, I keep backyard chickens and honeybees; I grow sprouts and make soap from scratch; plus yogurt, cheese, butter, tofu, kombucha, beer, cider, vinegar, sauerkraut, kimchi, fermented hot sauces, and pickled vegetables.     So happy I took this class. The class was filled with great information. Roe makes it simple and easy. I'll be milling my own grains from now on! No more store bought breads or flours. I'm super excited!

    This class exceeded all my expectations! I’ve taken bread baking classes before, but always left feeling overwhelmed. Roe Showed us how to make bread, and even how to mill our own flour. And he gave us a starter and easy recipe to be able to continue to make bread at home. If you’re interested in learning how to bake your own bread, take this class!

    I enjoyed the class very much. The instructor was very informative. I would highly recommend this class to anyone that wants to make high quality bread with little effort. My only issue was there is only street parking and I had to park 1/2 mile away.

    Though I have made sourdough many times with store bought flour, I took this class because I've never made 100% wholewheat bread. I enjoyed the whole process, we actually ground the wheat we used to make the dough, which was a first for me. The flavor of wholewheat bread made with freshly ground wheat is really good and the taste is so different from wholewheat bread you buy in a store. We had to take our dough home to bake (sourdough bread making is longer process so I knew we couldn't bake the dough we made in class, since it was a 3-hour class). We taste sampled bread that the instructor had made earlier and baked in class and he also made fresh butter - it was all delicious. We also got enough wheat berries and fresh ground wheat to take home make more bread, plus sourdough starter. The people in the class ranged from those who had never made any kind of bread before to some who had experience with sourdough. I thought the instructor was very good at explaining things to everybody and answering questions as they came up.

    The class was very informative. Very fun. Roo is a great teacher, his class was easy to understand and he gives you a feeling of trust that you can ask any question and it will NOT go unanswered. The atmosphere was good too. I highly recommend his classes.
