Enjoyed the class and had fun doing it! Ruth was s great teacher - full of information and teaching skills. Learned to temper and learned about the history of cacao. Recommend this class!

Although I enjoyed the class it is improperly named. We did melt & temper chocolate, but did not learn to mold or dip chocolate. I specifically need to know how to mold and that class is not offered until December. We learned about cocoa beans, regions that grow cocoa & tasted chocolate from different regions. Although interesting I feel the class needed to be renamed to end any confusion.

Ruth really knows what she is doing and how to teach. I took this class knowing a little or as they say enough to be dangerous. With that being said I learned a lot and picked up some great techniques and helped get a better understanding on tempering. Over all a lot of great info and the class was really fun. I believe there was not one person in this class that thought any different than I did. Nice school great instructor. I signed up for another class taught by Ruth. I live about 1.5 hours away it is worth the drive and more. Peter Z P.S. the staff is also very helpful and knowledgeable

Great class...learned the science of chocolate making, sampled many, many Artisan chocolates...both bars and cooking types, and got a chance to make 1 pound worth of homemade chocolates. Wish it would have included molded chocolates, but I guess that's a separate class.

Great class. I was excited to learn to make caramel...even though I don't care for them, I was keep eating the ones I made. Friends and family were complimenting, saying they are delicious and amazing. I thought caramels supposed to be hard to chew....but no! These are amazing. I can't hardly wait to make a batch for Christmas! :). By the way, Ruth is an amazing teacher. She knows her stuff abd she has lots of patience. Thank you! Violet
