Ruth is an AMAZING instructor! She is always very ambitious with the recipes and we end up taking home TONS of delicious goodies. The class sizes are always small enough to get just the right amount of personal attention. The Artisanal Chocolate Workshop was by far my favorite class out of the others I've taken with her at The Gourmandise School.

Lots of information on the "why" of chocolates; I felt more comfortable assessing the tempering process and why I was getting the results of what I was doing. Invaluable. Chef Ruth is very personable and easy to ask questions of.

it was a great class. I wish we would have more hands on experience and less from the theory part. I would like to take a advance class on how to make chocolate candies. Thanks Ruth, you were wonderful.
