What you'll learn in this wine class:

Join celebrity butcher Jered Standing for an evening of hog butchery and wine pairing. Those of you who have experienced our popular "Home Butchery: Whole Chicken" class with Jered know how approachable his teaching style is and how much you'll learn. 

The evening will include delicious snacks, wine tasting (three wines), hog butchery demonstration and pork tasting from different parts of the hog with a discussion of cooking methods. 

Upon arrival, we'll greet you with our first selection of wine while you mingle and enjoy snacks on the outdoor patio. Then it's on to the hog butchery demonstration! You'll see an entire side of Heritage breed pig from a California ranch up-close, broken down by hand using traditional methods.

As we pour the second wine selection Jered will share his buying tips as well as pointers on purchasing lesser known cuts that are not only cheaper, but more interesting to prepare.  

Paired with our third glass of wine, we'll demo how to cook different parts of the hog, and follow with a pork tasting geared toward experiencing texture and flavor differences from the same animal. 

There will be plenty of time to ask lots of questions and take lots of pictures as Jered wraps up fresh cuts of meat and stuffs them into your goodie bag for you to take home along with cooking instructions.

Cancellations made up to one week prior to a class are eligible for a full refund less transaction fees incurred by the Institute from both purchase and refund. Fees paid may also be applied as credit for a future class. Due to class demand, cancellations made three to seven days prior to a class are eligible for a fifty percent refund, or credit for the full fee may be applied to a future class. Cancellations made less than seventy two hours before an event are not eligible for refunds or credit.
