What you'll learn in this culinary class:

In Naples, Italy, buying and eating food in the streets dates back to ancient times. Its origins were likely in Roman and Greek thermopolia (cooking shops), which were enriched over the centuries by the influence of the many diverse cultures that controlled Naples and its kingdoms (e.g. Aragon of Spain, Bourbon of France, etc.).

Today in Naples, street food can still be found in little shops called Friggitoria. Here, Neapolitans eating on the run can grab a crocchè (stuffed potato balls dipped in breadcrumbs and then deep-fried) or perhaps a pizza a portafoglio, a variety of street food pizza. Other delicious items include deep-fried dough balls (pastacresciute), deep-fried polenta slices (scagliozzi), and deep-fried male zucchini flowers in dough (sciurilli).


Many vegetables and types of fish are deep-fried with flour and egg (dorate e fritte): eggplant, artichoke, zucchini, cauliflower; anchovies, sardines, calamari, and cod. The richest versions add pieces of liver, ricotta, or (in the past) cow's brain. Mozzarella can be prepared dorata e fritta as well (aka mozzarella sticks), or in carrozza – where it is placed between two milk-soaked slices of bread to make a sandwich, dipped in flour, then egg, then deep fried.


In this 3-hour class, you will learn the foundation to proper frying techniques, as well as learn some intermediate/ advanced methods. You will learn what oil type works best for the deep-frying process, what a smoke point is, and why this knowledge is key to creating a tasty and healthy product. Once you master these concepts, you won’t be afraid of fried food anymore!

At the end of the class we will all gather around the table and enjoy the delicious foods we have prepared, paired with wine and a fresh farm to table salad to balance the flavors.

  • Palle di Riso -  Bread-crumb-coated risotto balls, stuffed with ground beef ragú and mozzarella
  • Melanzane dorate e fritte - Deep-fried eggplant slices coated in eggs and cheese batter
  • Mangiamaccheroni (in two versions)
    1.Spaghetti in caciocavallo and pepper sauce
    2. Spaghetti in caciocavallo and pepper sauce, fried in tempura
  • Caponata del borgo - Endive, pickles and crostini salad in vinaigrette sauce

  • Crocché di Patate 
  • Deep-fried breadcrumb-coated potato croquets stuffed with ham and cheese

  • Deep-fried, soft, pizza dough balls stuffed with fresh seaweed

  • Baked and fried mini  Margherita pizzas  
  • Insalata di lattuga 
  • Lettuce and citrus salad

  • Mozzarella cheese placed between two milk-soaked slices of bread to make a sandwich, dipped in flour, then egg, then deep-fried.

  • Dough-coated squash blossoms stuffed with cheese and anchovies

  • Fresh spinach, sautéed mushrooms and Parmesan shaves salad
