What you'll learn in this seafood class:

Are you hooked on seafood?? In this weekend-long boot camp, we’ll dive into the world of seafood and explore a variety of finfish and shellfish dishes. You’ll learn how to (bait &) tackle fish fabrication, superb cooking techniques for different types of fish, and gain a better understanding of how to identify and purchase seafood.

Skill Level

Students of all skill levels will be able to keep up in this class. Beginners will quickly gain new skills, and seasoned cooks will refine existing skills while also building new ones.

  • Filleting Round and Flat Fish
  • Cleaning and Cooking Shellfish and other Seafood

  • Coastal Caldo | shrimp, scallops, littleneck clams, PEI mussels, calamari
  • Seafood Risotto |  shrimp, mussels, fennel, maitake mushroom, asparagus
  • New England Lobster Roll | butter-poached lobster, celery slaw, Old Bay aioli, brioche bun  
  • Pan-Roasted Bass | sun-dried tomatoes, capers, cauliflower, caramelized shallot vinaigrette
  • Fluke Sashimi Style | citrus cured, cold smoked, avocado mousse, aguachile
  • Whole Roasted Loupe de Mer | citrus, herb pesto, farro, roasted beets

What to Wear

For safety reasons, please wear pants, close-toed shoes with rubber soles, no long dangling jewelry, and have long hair either tied back or covered.

Refund Policy
Refund & Withdrawal Policy Student must inform the Director of Admissions in writing seven (7) days prior to the start of the first series class. After that time, the cost of the series classes will be nonrefundable.

There is no partial credit granted.
