Do you want to take your 100% whole wheat baking to the next level? In this class, I will take you through the steps needed to achieve a loftier sourdough bread using high hydration levels.
Back in my beginning bread class, we used a low hydration recipe (73%) that required very little work. In this class you will work with dough at around 100% hydration and the steps you can take to give your bread a better texture and bigger holes.
This class is much less structured and more geared towards the interests and questions of the group. We'll mix in some different freshly milled (and maybe even toasted) grains, based on your preferences - einkorn, buckwheat, teff, barley, millet, corn, or whatever you want for your dough.
You will learn to develop the gluten and how to handle a wetter dough. We'll discuss custom starter management and fermentation strategies.
We'll cover topics including autolyze, stretch and fold, and I'll show you how to safely bake a loaf in a dutch oven. You will go home with the dough you mixed in class, and any starter you need to keep baking.
Prerequisites - If you are new to baking sourdough, I recommend you take my regular 100% whole wheat sourdough class first. If you have been baking sourdough bread already, you should be familiar with the basics such as bakers formulas, fermentation times, starters and the general process of sourdough bread baking using natural starter.
You will go home with the dough you mixed in class, so bring a mixing bowl for that if you want (or you can take it home in a ziplock I provide, but let's save on single use plastic!).
Cancellations made at least 2 business days in advance of the class will be honored with a full refund less 5% cancellation fee. No refund after that.
