What you'll learn in this knife skills class:

Knife Skills is our most popular class! This hands-on chopping session will have you mincing, slicing, and dicing vegetables and herbs like a pro. Knife care, sharpening and honing, and selection and manufacturing are also covered by our chef.

  • Please note that upon purchase, your email address may be shared with The Chopping Block, and you will be receiving class and/or marketing information from the provider.

  • Also note that by purchasing seats for classes at The Chopping Block you are authorizing CourseHorse to charge your card if you order additional drinks and do not pay for them at the time of the class.

Refund Policy

A one-week notice is required for cancellation of any class. If you do not cancel by telephone at least 1 week in advance of your scheduled class, we will charge your credit card in full for the class. Please feel free to send a friend in your place if you cannot attend and it is within one week of the class as no refunds will be available. All classes also have a non-refundable, non-transferable 10% fee for the operational and administrative costs incurred by The Chopping Block. This service fee will not be refunded and cannot be transferred in the case of any cancellation.

Please note: all virtual class sales are final. All virtual students will receive a recording of the class within 48 hours of the class.

    The Chopping Block did not disappoint. The expert chefs (Pete and Maggie) were informative, engaging and had fun with the class. All while we learned valuable information that can be applied to our time in the kitchen. My daughter and I enjoyed our Knife Skills class and we are looking forward to scheduling another, different class to continue the fun and learning! Thank you.

    This was my third class at The Chopping Block and Lisa was the best instructor I’ve had yet, knowledgeable, funny and patient, demonstrating something repeatedly (in my instance, how to cut the foot and planks out of carrots) if it helps you comprehend a concept. But while Lisa is a very good teacher, every instructor and staff person I’ve so far encountered at this school has been exceptionally polite and goes out of their way to be helpful. I highly recommend taking a class here.

    Honestly I don’t think this class is very useful. I debated taking it for a while but it got such a good rating so I thought it must be good. The first hour was a pretty tedious lecture about knife history...types of knives...countries that manufacture them. Then came the hands on stuff which was still disappointing. I wouldn’t recommend it because I feel like you could take away the same information from a couple of YouTube videos.

    The description of the class was very on point, however I did think the class was a little overcrowded and the knives not all sharpened beforehand. Because there were too many people the second half of the class when we actually practiced was not very useful. That being said, the instructors were great and the Chopping Block was awesome as always.

    The instructor was excellent! She was very organized and detailed. She presented the information in a logical way and paced the class so that all could keep up but we were still able to accomplish all we set out to do. There was a second instructor who would float around and help us as well. We learned why chefs use certain knives for certain tasks and the types of basic chef's cuts for food. I would definitely recommend this class for anyone, as well as recommend taking other classes at the Chopping Block.

    I liked it, though it ran nearly an hour over time. The first half of the course was a lecture portion that was useful, but disorganized. Had she stayed on point the material could easily have been covered in half the time. The hands on portion of class was much better.

Does this class teach you knife speed or just the basics of knife skills?

I think they’re related. If you don’t know the basics you can’t have good knife speed. But speed isn’t the focus, per se.

The knife skills class covers basic knife skills and techniques. We have students ranging in skill and so if the student has some knife skills and would like to work on speed, they can do that as well. The chef explains and demonstrates the technique and then walks around helping guests. There is a lecture at the beginning of class and guests can ask questions and get tips on speed, knife sharpening etc.
