Cheese certainly loves its partners wine and beer, but it's high time for cheese to branch out a little--this time to the delightful spirit from across the pond. Allan Roth of Brooklyn's Char No. 4, shedding some light on what defines a scotch, how to assess it, and how various ages, blends, and malts contribute to its final flavors. To complete the experience, Jordan Zimmerman, the school's Associate Manager of Education, will be on hand to pair each whisky with its perfect cheesy compliment. Savor the peaty smoke of an Islay malt with the rich, boullion flavors of cheddar, and sip a smooth, velvety single malt alongside a caramel-sweet Gouda. Raise a glass to grains over grapes!
